It's back to school this week in SA (well at least for some of the kids), so I thought these very easy, nut-free and nutrient packed brownies would be a good one for you to try! They're full of good fats, magnesium and fibre and freeze really well also, so are a great one to batch cook for those weeks when time is a bit harder to come by.
(Although from experience, they very rarely make it to the freezer!)
Ingredients
1 medium ripe avocado (about 1 cup)
2 eggs
72 grams of coconut sugar
39 grams of ghee or coconut oil (I prefer ghee) – we love @melrosehealth
80 grams of dark chocolate chips – we love @chowcacao
56 grams of almond flour
40 grams of cacoa powder – we love @powersuperfoods
5 grams of baking soda – we love @luvinlifeau
3 grams of sea salt
2mL of vanilla extract
Method
1 – Preheat your oven to 180 ºC
2 -Place avocado, eggs, vanilla, coconut sugar and ghee into a food processor and blend until well combined.
3 – Add flour, cacao powder, baking soda and salt and blend again until combined. Mix in the chocolate chips, but make sure to keep a few to place on top.
4 – Line a 9 x9 inch pan and pour mixture in. Smooth the top and place the remaining chocolate chips on top.
5 – Bake for 18 – 20 minutes (It doesn’t matter if they are a little gooey on the inside 😉)
6 – Allow to cool before slicing. Enjoy!
